Chocolate Fudge (Big Hit at Vegan Bake Sale)
Ingredients:
12 ounces (340 g) nondairy semi sweet chocolate chips
6 Tbs non-hydrogenated, non dairy butter
3 1/2 cups confectioner's sugar
1/2 cup unsweetened cocoa powder
1 t vanilla extract
1/4 cups non dairy milk or coconut milk
1 cup chopped nuts (optional)
Lightly grease a 8 inch square baking pan with non dairy butter.
Place the chocolate chips, butter, confectioner's sugar, coca powder, vanilla, and milk in a double boiler. Stir until the chips are melted and the mixture is smooth. Add the nuts, if desired, and quickly poor the mixture into the prepared pan. Chill hourly for at least 3 hours, then cut into squares.
